Health Inspections: Black Goose Cafe, East Bay Community Action

The Department of Health posted the following health inspections in August. 

BLACK GOOSE CAFE (Inspected on Aug. 13)

Proper date marking & disposition 

Inspector Comments 
Food items, located in the walk-in refrigerator, were not marked with the date of preparation. Ready-to-eat potentially hazardous food , prepared in the establishment and held for more than 24 hours, must be marked with the date of preparation.23Consumer advisory posted for raw or undercooked foods 

Inspector Comments 
The consumer advisory provided does not disclose the foods on the menu that are raw or undercooked. At next menu printing asterisks must be added to the front of the advisory and to the front of any tiem affected by the advisory.31Proper cooling methods used; adequate equipment for temperature control 

Inspector Comments 
Proper cooling methods were not used for potentially hazardous foods. Items being cooled are placed in the refrigerator in containers greater than 4 inches deep. Large pieces of meat should be cut smaller to allow for proper cooling.35Food properly labeled; original container 

Inspector Comments 
Food items (fruit cups, chicken salad, gazpacho, pasta salad, spinach pies etc...) packaged in the food establishment are lacking labels. Food packaged in a food establishment must be labeled with the common name of the food, a list of ingredients, the quantity of the contents and the name and place of the business.53Physical facilities installed, maintained & clean 

Inspector Comments 
The floor in the kitchen is worn, covering has peeled it is not smooth, durable and easily cleanable. The materials for indoor floors must be durable, easily cleanable and nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas and toilet rooms. Establishment has plans to resurface floor in the winter months.53Physical facilities installed, maintained & clean 

Inspector Comments 
The floor and wall junctures under the 3-bay sink do not have coving. The floor and wall junctures must be coved and closed to no larger than 1/32nd of an inch.
