Penny Barnes's Cherry Cheesecake Cupcakes Are Sweet, Yet Smooth

Penny Barnes brought in her cherry cheesecake cupcakes recently to knitting class at the Tiverton Senior Center.

When it's Tiverton resident Penny Barnes's turn to bake for her knitting class at the , she takes the time to create what she knows her friends love. Recently, she brought in her cherry cheesecake cupcakes. My my, they were absolutely rich and delicious, especially eating the textured cheesecake with a cherry and the pie filling in the center. It was a sweet taste combined with a smooth and creamy texture.

"I've been making them forever," she said.

Barnes is one of two people in her knitting class that brings in baked goods. With summer and July 4, these treats would go well with any after dinner snack while watching the fireworks from your lawn chair.

For this, you will need:

  • 1 tablespoon of lemon juice
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 2 eggs
  • 2 8-ounce containers of cream cheese
  • vanilla wafers

Next, mix the ingredients together in a large bowl. Put the vanilla wafers in cupcake papers in a cupcake baking sheet. Fill each slot to the top with the mixture. Cook them at 350 degrees for 35 minutes.

Barnes said the cupcakes will drop in the center after they are removed from the oven and cooled down.

Then, place cherries and cherry pie filling in the center. Barnes said she makes a batch between 10 and 12 cupcakes.

"It can be blueberry, cherry or apples," she added, noting she cuts apples into smaller pieces to add to the center.
